Pretty much all decent sized electric motors have a start up capacitor. They need an extra bit of energy to build up the magnetic fields, overcome static friction and accelerate the motor up to the operating speed.
They’ve been moving this way for years. SQL server, .net core and powershell all run on linux and are a much bigger deal.
The issue is less that it will make you sick and more that you’re likely eating a potent carcinogen. Many of the molds that commonly grow on food produce aflatoxins.
